With December here and the holiday season in full swing, it is already time to start thinking about the holiday menu. My family hosts Christmas each and every year for my mom’s side of the family and it always turns out to be a wonderful time. Between our family coming together, the delicious food, and the fun to be had, we always look forward to Christmas. We have started to extend it into a cousin sleepover to continue the fun into the next day. When Hamilton Beach offered to send me their Stack and Snap 10 cup food processor to create a holiday dish, I jumped right on the opportunity. I have always wanted a food processor and this one in particular made me realize how much of a help a food processor can be.
Using the food processor this past holiday weekend has made my time spent in the kitchen a lot less and allowed me more time to spend with my family. Instead of standing at the kitchen counter chopping veggies, I could throw them in the food processor and let the blades do the chopping instead.
When I attended Thanksgiving dinner at my aunt’s house on Thursday, one of the appetizers she had out was hummus mixed with salsa. I was a little embarrassed that I had yet to think of that combination on my own. I mean, I love hummus and I love salsa, so it only makes sense that put together it would taste pretty great. I decided I would recreate the recipe using my food processor and instead of using plain hummus like she had, I decided to add in some roasted red pepper for an extra kick of flavor.
Roasted Red Pepper Hummus + Salsa

Ingredients for Roasted Red Pepper Hummus
-1 can Chickpeas, drained
-1/4 cup Tahini
-2 Garlic Cloves, peeled
-8 oz. Roasted Red Peppers
-1/4 cup Lemon Juice
-2 tbsp. Olive Oil
Directions for Roasted Red Pepper Hummus
-Put 2 garlic cloves in food processor and pulse to chop the garlic cloves
-Add in all remaining ingredients and puree until you reach a creamy consistency
Ingredients for Salsa
-2 cups Grape Tomatoes
-1/2 cup Fresh Cilantro
-2 Garlic Cloves, peeled
-1/2 tsp. Salt
-2 tbsp. Lemon Juice
Directions for Salsa
-Combine all ingredients into food processor and puree until all ingredients are chopped and mixed together
Once you have both the roasted red pepper hummus and salsa done, combine all into one bowl. Stir and let sit in the fridge for about 10 minutes.
Serve and enjoy!
