One of my favorite parts of the holiday season is the gift-giving. I love writing out a list of everyone I have to buy for and figuring out what to buy them. Sure, some people are easier than others to shop for than others, but sometimes shopping just isn’t the answer.
Instead of hitting up the mall, which can be the worst during this time of year, sometimes hitting up the kitchen can be just the answer.
No lines, no worries of something being sold out, no digging through unorganized shelves (okay, maybe that one happens in the kitchen too)… I’m all in.
While there are a ton of different things you can make for friends and family in the kitchen, my favorite thing to make is GRANOLA. Nothing beats granola, especially when it is baking in the oven and the smell of granola fills the air of my entire apartment.
So many people love granola, and surprisingly so many people have never made it at home. I love making it at home because you can create so many different varieties, you can control the ingredient list, and you can enjoy the aroma that fills the air while it is baking.
Plus, it is SO cost-efficient to make too. Seriously, oats are so cheap.
Since you wouldn’t want to gift someone a typical granola on Christmas, I am sharing a festive granola recipe that will be the perfect granola to gift to others this holiday season.
Yup, that’s right, this Mint Chocolate Chip Granola is the perfect granola to gift this holiday season, but don’t forget to save some for yourself! I love adding this granola into vanilla yogurt and it would also be delicious stirred into a smoothie bowl. I often just keep a bag of this next to me at my desk while I am studying or blogging and it keeps me nice and happy.
- 3 cups Old Fashioned, Traditional Oats
- ½ cup Chopped Almonds
- ⅓ cup Unsweetened Cocoa Powder
- ⅓ cup Honey
- ⅓ cup Cacao Nibs
- ¼ cup Extra Virgin Olive Oil
- 1 tbsp Stevia
- 2 tsp Sea Salt
- ½ tsp Peppermint Extract
- Preheat oven to 350 degrees farenheit and line a baking sheet with parchment paper.
- Combine all ingredients in a large mixing bowl and toss.
- Evenly spread mixture on parchement paper-lined baking sheet and place in pre-heated oven,
- Bake until granola is golden brown, about 40 minutes. Stir every 10 minutes.
- Take out of oven and enjoy! Granola can be stored in an airtight container.
