Wait, scratch that… these are the best snack I have posted on the blog so far. And that is not to mean the other snacks I have posted thus far are not good (they are goooooood), but oh man, these Chocolate Peanut Butter Cookie Energy Balls are just so dang good. They were a good practice of eating in moderation in the days after I made them.
But first, can we just talk about my latest obsession besides energy balls?
Okay, so I go through phases where I listen to podcasts every day for like a week and then I stop and don’t listen to one for months. But lately I have been all about the podcasts. They are perfect to listen to while I am blogging (yup, I am listening to one right now), while I am getting ready for the day, or even when I am lesson planning (I feel like that is all I do these days). They are great to have on in the background and even if I don’t pay full attention to them while I have them on, they are great to have on just to have some background noise.
But for the most part I do pay attention to them and always leave each one with advice, tips, or an interesting story to share. Are you a podcast fan too?
Some of my favorite podcasts: Runner’s Connect, Blissful Bites with Nicole Culver, Balanced Bites, This American Life, and The Rich Roll Podcast. There is probably a million more out there that I would love, so if you are into a podcast, certainly leave it in the comments below.
I feel like it is the golden hour of podcasts right now, I feel like everyone I talk to is talking about what podcasts they are listening to, even if it Serial (still never finished season 1…). It is funny for me that I am going into social studies education, yet none of the podcasts I listen to regularly have much to do with social studies or education (This American Life does a bit I guess). Maybe I should look into some history podcasts? Though, I love listening to podcasts related to health and fitness since it is a passion of mine, but something I am not studying in school, so it is something I listen to out of pure enjoyment. I feel like I would probably get bored with a history podcast since I would feel like I am in class.
I guess that is why I love spending my free time reading health and fitness related books or articles and listening to health and fitness podcasts. I freely choose to research more about health and fitness, rather than tying it to a specific assignment I am working on. It is kinda cool to have two passions that are pretty different from each other. I spend my days in the history books and spend my evenings in the world (and podcasts) of health and fitness.
Okay, now back to my other obsession — these Chocolate Peanut Butter Energy Balls that are da bomb. I am not even kidding. They are a healthy snack that could easily be mistaken for a dessert.
Essentially they are a homemade DIY version of the Chocolate Peanut Butter Larabar, buttttt I was too lazy to make them into bars, so I rolled them into balls. Because who doesn’t love balls?
- 1 cup Unsalted Peanuts
- 1 cup Dates
- 1 cup Chocolate Chips
- ⅛ tsp Vanilla Extract
- Sea Salt, to taste
- Optional: If dates are hard, soak in ⅓ cup of warm water for 10 minutes, then drain to soften.
- Combine all ingredients in a food processor and pulse for about 1 minute, or until mixture sticks together well and everything is chopped up.
- Place on a parchment-lined baking pan (for easy clean up) and roll mixture into 12 balls and place on pan.
- Refrigerate for 1 hour to harden.
