There is one thing I forgot to share in yesterday’s weekend recap… I finished my taxes! Whoop whoop! I usually get them done in February but because I made income off of the blog this year I had to figure out how to factor those in. Once I figured out what to do, I was able to sit down and get my taxes done in about 20 minutes.
It’s funny because I always put off doing them, but since I am still claimed by my parents and don’t have any assets or such, my taxes are super simple and straight forward. It sure is going to suck when my taxes become a lot more complicated.
So what’s a girl to do when she receives her tax return refund?
I don’t know about you, but I treated myself to a new pair of running shoes. Although, I would not so much call it “treating myself” as I am way over miles in my current running shoes right now so they were more of a necessity. I just justified the purchase with my tax return refund.
So now I am the proud new owner of Mizuno Wave Rider 18s. I upgraded from the 17s since I loved them and figure I will love the 18s too and because I am officially a Mizuno addict. I don’t think a week goes by at this point that I am not on the Mizuno website checking out the latest gear. No shame.
So, now that my taxes are done and my new running shoes are here (yes, I ordered the shoes before I even filed my taxes…), I am ready to actually receive my refund money and for spring to really be here. I was tricked on Sunday with temps climbing into the 70s, but now we are back to usual March weather and I am not a fan. I love springtime running and now that I have a new pair of running shoes to run in, I am so ready for it.
Until then… I guess I’ll just bake to make up for it? I have been experimenting with gluten free baking. No, not because I am gluten free, but I know a certain amount of my readers are and, well, I thought it would be a fun challenge to take on. I partnered up with Swanson Vitamins to create a new recipe and I decided now was the time to stock up on some gluten free flours. I bought everything from brown rice flour to coconut flour to almond flour. I first decided to start off with experimenting with coconut flour since I thought it would give a nice sweet flavor to whatever I baked with.
A note on Coconut Flour
What I have learned though is coconut flour is not your typical flour. Because of its high fiber content, coconut flour absorbs a lot of liquid, so you must increase the liquid in recipe. Usually zucchini bread recipes call for 3-4 eggs, but this recipe calls for 6 in order to prevent the bread from being too dry.
This Coconut Flour Zucchini Bread turned out way better than I expected. Since it was my first time experimenting with gluten free baking, I was a bit nervous, but I absolutely loved it. The coconut flour is not overpowering and it just adds a slight sweet flavor. This is absolutely amazing right out of the oven or microwaved and topped with nut butter. This has been my afternoon snack for the past week and I have loved it.
- 1+1/2 cups Zucchini, Shredded
- ¾ cup Coconut Flour
- ⅓ cup Coconut Oil
- ⅓ cup Honey
- 6 Large Eggs
- 1 tsp Vanilla Extract
- 1 tsp Ground Cinnamon
- ¾ tsp Baking Soda
- Preheat oven to 350 degrees
- Spray a 9x5 baking loaf pan with nonstick cooking spray or line with parchment paper
- Squeeze moisture out of zucchini
- Combine all ingredients, minus zucchini, and mix together
- Stir in zucchini
- Place in baking loaf pan and bake for 45-50 minutes, or until a toothpick inserted comes out clean
