Guess what today is friends? My first day of school!! I seriously cannot believe that summer is already over and school will now be in full swing. A little part of my heart breaks, but another part of me is so excited for the year ahead.
This past weekend I was up north at the summer camp I attended growing up, but for a young adults weekend. It was fun being at the camp with all young adults and to be able to connect with so many people. Between hiking, hanging out at the beach, Greek dancing, praying together, and more it was the perfect way to say bye bye to summer. Now I am heading into the school year refreshed and with a full heart.
So yes, I am nervous as heck for this upcoming year (I know I have probably already mentioned that 46382 times before, whoops), but I am excited. I am finally able to call myself a teacher (even if it technically is a student teacher and I am not getting paid, whomp whomp), and I can finally start doing what I have been dreaming about for years. Or really, my whole life.
I know growing up kids go through a bunch of different jobs they want to have when they grow up — doctor, veterinarian (I swear, everyone wanted that one), fashion designer — and it seemed like every week kids wanted to be something else. I love that. I love seeing kids want to try different things and chase after what they think may be the best fit for them.
For me on the other hand though, I have always wanted to be a teacher. Ever since I played school with my next door neighbor every single day, I knew I wanted to be a teacher. At first I wanted to be an elementary teacher, then as I entered into middle and high school I realized I wanted to teach secondary education.
And let me tell you, my neighbor and I were legit teachers. We had THE set up. We set up our “classrooms” in her basement, complete with two desks each, an overhead projector, a desk (that was made out of boxes), a whiteboard. I felt in my element there. We would even have days where we would substitute teachers for each other and would leave each other guest teacher plans that we would have to teach.
Did I mention we were legit? 😉
There was a short time I wanted to be a photographer and an even shorter time I wanted to be a writer, but I always seemed to go back to wanting to teach. I guess my desire to photograph and write is being fulfilled with this whole blogging gig ;).
There has just always been something about connecting with students and sharing my passion with them. When I fell in love with history and politics in early high school, I knew that was what I wanted to teach. Everything I did in high school helped me to further myself in my goal. I took child development courses, I taught in the preschool that was in our high school, I was a “teacher cadet” in an elementary school during my senior year. Everything I did, I did it to help myself get into the education field.
And here I am today, starting my next step in becoming a teacher — starting my student teaching internship. I am equally nervous and excited for what is to come, but all I know that I can do it embrace it. Embrace the days when I feel like throwing in the towel, but instead get back up. Embrace the days I feel like I will never finish grading the stack of papers in front of me. Embrace it all because I am living the dream I have had since I was little. It’s crazy, isn’t it?
And another dream of mine that is coming true, cookie dough my mom will actually let me eat. But really, who actually listened to their parents and DIDN’T eat the raw cookie dough??

This Vegan Snickerdoodle Cookie Dough is:
- Only 7 ingredients
- Easy to make
- Dairy Free
- Gluten Free
- Plant based
- Protein packed
- 1 can chickpeas
- ¼ cup creamy peanut butter
- 2 tbsp Almond Milk
- 1 tbsp Maple Syrup, honey if not vegan
- 2 tsp cinnamon
- 2 tsp Stevia
- 1 tsp vanilla extract
- Rinse chickpeas and let dry
- Combine chickpeas, peanut butter, honey, cinnamon, stevia and vanilla extract in a food processor and process until smooth
- Eat immediately or place in airtight container in the fridge for 4-5 days
