Blogger fail: This recipe should have been published last week or even before that. Deviled eggs are synonymous with Easter, so certainly this recipe should have been shared before Easter, right? Right. But I had other recipes (like this Pico de Gallo) that I had on my calendar to share first so these deviled eggs are coming at ya a few days after Easter.
So I say, let’s just make these Goat Cheese Hummus Deviled Eggs for the fun of it… no holiday involved! I seem to only eat deviled eggs on holidays, but this recipe is SO easy that these would make for an anytime of day snack.
The toughest part of this recipe is hard boiling the eggs. If you are a pro at that, then this recipe is going to be a breeze for you. If hard boiling eggs isn’t really your thing, I am here to tell you it is not hard to do at all!
You can follow an online tutorial OR you can buy an egg cooker. I use my egg cooker to hard boil eggs all the time since I just put the eggs and water in and it does the rest of the work for me. Lazy or smart? You can decide 😉

Speaking of family gatherings… how was your Easter??! I had the best weekend celebrating the holiday with family and friends and even though it went by too fast for my liking, I enjoyed and savored every moment of being surrounded by loved ones… and food. So. Much. Good. Food.
Let’s just say my Greek family takes its Easter celebrating very seriously. Lamb on the spit in the yard and all. I wouldn’t know an Easter celebration any other day.
But now it is back to routine and back to work. I only have a little over a week left of my internship! I cannot believe it is coming to an end so fast. Like, really fast! Last week I had to do a portfolio defense where I shared different lessons and parts of my internship that helped me grow during the school year. It made me realize how bittersweet the end of my internship is going to be. I am ready to have my own classroom and finally become a teacher, but I am also going to miss all the connections I have made at the school I am at. And looking back on the whole school year, gosh have I grown as a teacher. I finally feel comfortable having my own classroom and being me as a teacher (if that makes any sense…) and wrapping up the whole internship in the portfolio defense almost made me a little teary eyed. Not going to lie, some tears may be shed on my last day next week.
But back to these eggs!
These Goat Cheese Hummus Deviled Eggs are:
- Gluten Free
- Ready in under 30 minutes
- Easy to make
- 6 Large Eggs
- ¼ cup Hummus
- 3 tbsp Crumbled Goat Cheese
- Hard boil the eggs.
- Peel eggs and slice in half lengthwise.
- Remove the yolks and place them in a mixing bowl. Mash the yolks with a fork.
- Add hummus and mix together.
- Fill the center of each egg white with the yolk/ hummus mixture.
- Sprinkle each egg with goat cheese and serve.
