Can you believe the 4th of July is only a week away?! This summer sure is flying by! Summer used to feel a whole lot longer when I was in college and my summer break started in early May, rather than mid-June! I can’t complain though, having this summer off has been wonderful so far.
I finally have time to decompress and just relax. I have also been spending a lot of time applying for jobs and going on interviews. It has been a good mix of busy and not busy. This past weekend I volunteered at my church’s annual Greek festival and also had time to enjoy it myself. Good Greek food, Greek dancing, live Greek music, and all my Greek friends… it does not get much better than that!
Oh! And yesterday I started marathon training. I still cannot believe I am “in training” for a marathon, but I am doing it and so far so good! The hardest thing about marathon training is what is up next for it: vacation.
This weekend, my family and I are taking off for up north for our annual family vacation! I know it will be tough to get the motivation to go on training runs the whole week we are away, but the area we are staying is supposed to be really beautiful, so I am hoping I have that as motivation to get outside and running. I think the key to marathon training while on vacation is going to be getting my runs in before the rest of my family wakes up. Even if that means setting an alarm on vacation. I am determined to get my training in!
Speaking of our family vacation, I am so excited to be going away on vacation during the 4th of July. It has been a while since we went on vacation during the holiday, since we usually would go in August. This time around, it worked best for all of our schedules to go during the 4th of July and I am pumped.
We have plans to visit the local brewery, my cousin’s restaurant, spend time on the lake, and run a race! I figured since I would be training for a marathon on vacation, I might as well make a race out of it! I won’t be “racing” since it is not recommended to do so on my training plan, but I still planning on giving it a good effort and seeing how I do. I am running a 10 miler, which will be my first 10 mile race!
Aaannnddd… we are definitely going to eat good! Whenever we go on vacation as a family, we always find the best places to eat and when we have a kitchen at our place, we like to make some good meals there too.

These Patriotic Cookie Dough & Fruit Skewers are:
- Gluten free
- Dairy free
- No bake
- Easy to prep ahead of time
- Kid friendly
- 1 cup Natural Peanut Butter
- 1 scoop Vanilla Protein Powder (check for DF, GF if needed)
- ⅓ cup Coconut Flour
- 2 tbsp Honey
- 2 tbsp Dark Chocolate Chips
- 2 tbsp Milk (I used coconut, you can use any)
- ½ tsp Cinnamon
- 16 Strawberries, tops sliced off
- 16 Blueberries
- In a large mixing bowl, combine all ingredients - minus the fruit - and mix until well combined
- Add additional milk if too dry, add additional flour if too wet
- Roll mixture into 16 1-inch balls
- Store cookie dough balls in fridge for 1 hour to harden
- Take cookie dough balls out of fridge and put on skewers along with strawberries and blueberries
