Hey! Hey! Hey! How was your 4th of July holiday? I feel like I have not been on here in a while since last week’s post was scheduled to go out ahead of time so I could enjoy my family vacation without the worry of getting out a blog post. I missed you guys!
I was up north for the week last week and it felt so good to be on vacation for a week and enjoy time with my family. We did everything I could have wanted to — went stand up paddleboarding, ran a race (recap coming soon!), shopped at the farmer’s market, went to the wineries, shopped in local downtowns, relaxed at the beach, and spent time with my family that lives up north. It really was the best. In the midst of being stressed over my job search, this was just the vacation I needed.
But now I am back and I have a recipe that I am pumped to share with you! Have I told you yet that I am a brand advocate for Manitoba Harvest? I am really excited to be a part of the Manitoba Harvest team and to be able to share the Manitoba Harvest love! I have been using Manitoba Harvest hemp hearts for years and have found so many uses for them — I put them on top of salads, on top of smoothies (or blended in), in salad dressings, in a yogurt bowl, in energy balls and bars, and so many other ways. You would not think there would be so many uses for these little hemp hearts, but there really are!
Plus, hemp hearts pack a nutritional punch. They contain 10 grams of plant-based protein, 10 grams of omega-3 and omega-6 (per 30-gram serving). Hemp Hearts can be enjoyed straight from the bag too! No need to cook or grind them up, just take out right from the bag. So easy!
Like I mentioned, I love adding hemp hearts into energy balls. They really pack on the protein into an energy ball so that I can keep fueled before a run, for a mid-day snack, or whenever. I hope you love these FOUR ingredient balls as much as I do! Trust me, these balls are soooo easy to make and so darn tasty!
These 4 Ingredient Coconut Hemp Balls are:
- Dairy free
- Gluten free
- Meal prep friendly
- Easy to make
- No bake
- 8 pitted Medjool Dates, soaked for 5 minutes then drained
- ½ cup Manitoba Harvest Hemp Hearts
- ½ cup Unsweetened Shredded Coconut
- ½ cup Raw Almonds
- Place drained dates and almonds into a food processor and blend until dates and nuts have both been broken down.
- Place mixture in a bowl and add Manitoba Harvest Hemp Hearts and unsweetened coconut flakes. Mix together until well combined.
- Roll mixture into 10 balls.
- Place balls in an airtight container to refrigerate for at least 1 hour before eating.
- Store balls in refrigerator to have on hand all week long!
