I am back again with another post in collaboration with Vital Proteins and this one has been a big hit. We are talking Tropical Coconut Vanilla Popsicles with collagen, raw greens, probiotics, and more. I know that when you read raw greens you probably rolled your eyes and imagined a popsicles that tastes like grass. Well, let me be the first to tell you, this popsicle recipe absolutely does not taste like grass. These popsicles have a tropical vibe with coconut milk, coconut water, pineapple, and mango all in the ingredient list.
When Vital Proteins sent along their Collagen Beauty Greens I knew I would be a fan. I have loved adding collagen into my diet (hello healthy hair and nails!) and why not add some more greens into my diet as well?
The Vital Proteins Collagen Beauty Greens is an elixir of marine collagen, raw greens, hyaluronic acid, and probiotics. With a squeaky clean ingredient list ?I knew I was going to love this mix:
- Marine Collagen (snapper)
- Organic Wheat Grass
- Coconut Water
- Organic Alfalfa Leaf
- Organic Kale
- Organic Barley Grass
- Madagascar Vanilla Bean
- Organic Spinach
- Bacillus Coagulans
I immediately wanted to get a bit creative with these Beauty Greens instead of just telling you to mix it with liquid (which you can totally do). I wanted you to get pumped about trying this elixir out and since it is still summertime and all, I thought why not make POPSICLES!
It all sounded good until I realized my beloved popsicle molds were packed away from my apartment over at my aunt’s house. Whomp, whomp. Now I was craving homemade popsicles with no popsicle mold. I decided to put my big girl pants on and go out and buy a new mold and get these popsicles made. I searched around Target trying to figure our where in the world would they sell their popsicle molds (in the summer seasonal section? in the kitchen section? in the kitchen appliances section? by the food?) I finally found the molds in the kitchen appliance section and made my way out of Target with only what was on my shopping list ?talk about a win!

These Tropical Coconut Popsicles (with collagen) are a tasty treat to cool off mid-afternoon, after dinner, or whenever you are craving something refreshing and tasty.
No popsicle molds? No problem! This recipe is just fine as a smoothie. It makes a lot for a single serving smoothie, so you will definitely have some to share (or freeze for later on). Trust me, I have enjoyed this as a smoothie when I was too impatient to wait for them to freeze into popsicles 😉

- 1 cup Canned Coconut Milk
- 1 Banana, frozen
- 1 cup Pineapple, frozen
- 1 cup Mango, frozen
- ¾ cup Coconut Water
- 2 scoops Vital Proteins Collagen Beauty Greens
- Combine all ingredients into a blender and blend until smooth (add additional coconut water if necessary)
- Distribute the mixture evenly among 10 popsicle molds
- Transfer popsicle molds into the freezer and freeze for 3-4 hours, or until frozen
