Pumpkin season is here! Get into the fall season with an easy to prep breakfast that is ready for you when you wake up! This Pumpkin Pie Overnight Oats is a filling fall breakfast that is vegan, dairy free, and gluten free.
It is Sunday morning as I am sitting here typing this post up. I just finished a five mile easy run and am back into my cozy sweats, with a cup of warm coffee, and the windows open just enough to get a cool breeze into my apartment. I have a cinnamon candle burning and a to-do list to get to later on. For right now, I am enjoying the moment. The sun is just starting to brighten up to sky and I am taking in this time I have right now.
Last week, I started coaching cross country. It was a last minute situation and I was not fully prepared ahead of time to add an extra two hours to my work day. I get into work an hour early, teach all day, then head out and coach cross country. By the time I make it home, I have a marathon training run to get in and by the time that is done, I am sitting down to eat dinner at 8pm. Just to head to bed by 9:30/9:45 and do it all over again the next day. Although it is a lot to handle right now, considering this is my first year of teaching on my own, I have been loving it. I love seeing my students get excited about running and cheering for them through their workouts. But, by the end of the week, I was feeling really run down. Since I did not know I was going to be coaching until the day before I started, I did not have the time to prep dinners to be ready when I got home or have time to pick up my apartment. I felt like I was on the run (literally and figuratively) all the time this past week.
So this weekend, I took it easy. Saturday and Sunday I woke up without an alarm, giving my body at least 9 hours of sleep. I explored a new trail on my Saturday long run, I checked out a new farmer’s market. I finally got my finances in order and watched a movie (which if you know me, I rarely ever watch a full movie in one sitting!). This morning, I went out for an easy run and sat down to eat breakfast and enjoy my cup of coffee relaxed. I have some meal prep to do today, a whole lot of cleaning to do around my apartment, and some blog work to do, but I also plan on taking time for myself this evening. I am thinking an epsom salt bath is a must this evening. I want to go into work (my first full week of school!) refreshed and refocused and ready to take on whatever comes my way.
All that’s to say — take some time for yourself today. With a new season comes new intentions and a fresh start to setting new habits. Make time for doing something you love — whether that be a walk to a local coffee shop, a sunrise run, a book and cozy socks, a bath, or a batch of fresh cookies. You do you ?
Since fall is here (as I am sitting under a blanket in cozy sweats and a sweatshirt), it is all about PUMPKIN. Call me crazy, but I still have yet to try a PSL. I have never really craved it, even though I love a good latte and I love pumpkin. A chai tea latte, though? I am totally your girl!
Even though I have yet to try a PSL, I still love bringing out the pumpkin this time of year. I have a pumpkin candle in my bedroom and it is my favorite scent to have right now in my apartment.? Since pumpkin is on my mind (and now a chai tea latte too?), it is time to share my first pumpkin recipe of the season. And obviously because my life has been go-g0-go lately, it is a meal prep recipe because duh.
Overnight oats for the win!
These Pumpkin Pie Overnight Oats are:
- Meal prep friendly
- Perfect for fall
- Dairy free
- Gluten free (make sure to use certified GF oats if needed)
- 1 cup Unsweetened Vanilla Almond Milk
- ½ cup Old Fashioned Traditional Oats (use certified GF oats if needed)
- ¼ cup Pumpkin Puree
- 2 tbsp Chopped Pecans
- 1 tbsp Chia Seeds
- 2 tsp Maple Syrup
- 1 tsp Cinnamon
- ½ tsp Sea Salt
- ½ tsp Pumpkin Pie Spice
- Combine all ingredients into an airtight container (mason jars work great for this) and stir together to mix everything together.
- Place container in fridge overnight.
- Take out of fridge in the morning and add a splash of unsweetened vanilla almond milk if needed.
- Top with additional pecans if desired
- Serve with a spoonful of peanut butter (or nut butter of choice) to add in protein and a creamy nutty flavor!
